Have you tried looking on job search websites to see if there are jobs in that field in your area or an area you would be willing to live in?
One field you could work in is environmental consulting though there are proportionally fewer positions for ecology people than engineers. Another option is working for the federal government (such as park service and wildlife management), but those jobs have been hard to come by lately due to cuts in government funding. And of course you could get a PhD and do research/be a professor.
Hopefully someone else can give a more thorough answer.
