I'm hoping not to have to drag my education out longer than four-five years and am very interested in Psychology/Fine arts. I'm hoping to get into art therapy but am unaware of how to get there.

Art therapy is a good career. Art therapy is a field of psychology or a combination of art and psychotherapy. To get there is a long journey. You would need more than five years to become an art therapist.
Of course ! Work hard to obtain internships at a company in a business sector that intrests you. Internships are great programs for both the student and the company. It's like a prolonged, on-the-job interview.
Spend your summers productively and look for interships through your school, your town, your circle of friends, family, and relationships.
All three of my daughters participated in internship programs. And today,they are all working in their fields of interest with a developed expertise.
