I adore Mathematics and various other subjects of interest, but predominantly Mathematics. I need a job that pays moderately high and one that would have no shortage of challenge.
Also I'm fairly certain I do not want to be an Engineer.

Have you considered trying to be a Research Scientist/Professor? In order to get a PhD you have to generate new reserach that nobody has previously published, and then you would keep doing that once you finish your degree.
There are also several companies out there looking for data-mining experts and people to develop various data-processing algorithms (Google, Apple, etc.).
Finally, what is it about being an Engineer that you find off-putting? There are a lot of different types of engineers and maybe there is a type that would be good for you (I, for example, am a Reliability Engineer with a Mechanical Engineering background).
