Educational Psychology may be of interest. This is a broad field of the study of how people learn in educational environments. This could include the research of learning theories, instructional methods, and assessment (ie. standardized testing) just to name a few. School Psychology is another path. Typically, school psychology focuses more on individuals rather than whole populations.

If you want a job that you have to have an understanding of human thinking, a psychology degree would greatly benefit that.
