I am 20 years old, finishing up my general education, and I would like to get a bachelor's degree in a foreign language (Chinese). I know I always loved language (especially foreign language), reading, and writing, but I'm not yet sure what I would like to do.I am considering something like working in marketing or public relations. Basically, I would like to know what my options are and how to start getting work experience.

You are on the right path already. First, if you can combine your interests and passion with your career, then you will never truly "work a day in your life." You will have the opportunity to love what you get paid to do. Next, one of the fastest growing languages in the U.S. is Chinese, and the many different dialects of it...Mandarin, Cantonese, etc. Depending on what part of the country you are in, there will be a great need for it. If there is not a great demand in your area, there is a great demand in many other places in the country. Lastly, I know that you would have a wide variety of options for work. You could easily be a translator for a big company/corporation. You could also use your skills to work in the non-profit sector helping a cause that you also care about. Another option is to use your education for teaching or tutoring others, which could also be done on the side. With the advanced knowledge of a second language, especially Chinese, you will have an wealth of opportunities to pursue. Good Luck and Enjoy!
