This site has a lot of good information on various careers in the health care field and would be a great place to start: http://explorehealthcareers.org/en/Field/25/NutritionDietetics
Another great resource is your primary care doctor. They usually work closely with nutritionists and might be able to help you get in touch with someone you can shadow or at the very least ask questions about the field.
If you don't have a physician, I've found contacting volunteer services at most hospitals are really great with getting you in touch with someone who can help, since they usually have a lot of volunteers coming through asking the same questions.

You can start by researching health and nutrition schools in your area, then go from there. I would advise you to try and be specific with what you want to do, so you can have a direct path. With education cost going up everyday, you don't want to spend a penny on something you are not going to need. Best of luck
