The first year is the hardest because you need to have a mentor for your clinical fellowship year but after that jobs are available, especially per diem jobs. Im speaking from my close friends experience as she is a speech therapist and I am an occupational therapist who works with speech therapists. Here is a nice link on a speech therapists perspective on finding jobs the first year.
The easiest obs to find will be in skilled nursing facilities but could be in hospitals and other settings depending on your interests. (hospitals are harder to get into so if thats what you want, start there).
Hope this helps!
